Savoring Love and Wellness: A Valentine's Day Dinner for Two on the Journey to Healthier Hearts

“Celebrating love and savoring every moment—a perfect Valentine’s dinner for two hearts beating in harmony. 💖🍽️ Treat yourself to a low-calorie yet flavorful 3-course steak, shrimp, asparagus, and cheesecake dinner this Valentine’s Day!

Shrimp & Steak

Ingredients:

  • 2 – 3 ounces beef tenderloin steaks
  • 4 jumbo shrimp 
  • 1 juiced lemon or ¼ cup lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh cilantro
  • Fresh cilantro sprigs

Directions:

  • Place meats and shrimp in resealable bags.
  • In a bowl stir together lime juice, garlic, olive oil, cilantro, 1/4 teaspoon salt and 1/8 teaspoon pepper; pour in a bag; seal. Marinate in refrigerator up to 2 hours, turning occasionally. Drain; discard marinade.
  • For a charcoal grill, Grill steaks 8 to 10 minutes for medium-rare, turning once. Grill shrimp 2 to 3 minutes per side or until shrimp are opaque.
  • Place steaks on a platter. Add cilantro sprigs. Place shrimp atop each steak, forming a heart shape. Serve with marinara sauce.

Garlic Grilled Asparagus

Ingredients:

  • 2 lbs asparagus
  • 8 Cloves of garlic
  • 1 tsp Onion powder
  • 2 tbsp Parsley
  • Black pepper to taste
  • Coarse sea salt to taste
  • Extra virgin olive oil

Directions:

  • If desired, cut the ends off the asparagus
  • Heat pan to medium high
  • Drizzle olive oil over asparagus
  • Add seasonings and mix until asparagus is evenly covered in seasons
  • Cook on stove top for about 10 minutes – until preferred doneness
  • Add garlic the last 1-3 minutes

Low – Calorie Cheesecake

Ingredients:

  • 2 eggs
  • 2 tsp vanilla
  • 1 & ½ cup plain Greek yogurt
  • ¼ cup stevia or preferred sugar substitute
  • 16 oz fat-free cream cheese, softened
  • 2 tbsp melted butter

Directions:

  • Mix softened cream cheese and yogurt until well combined. Set aside.
  • Blend eggs, vanilla, butter, and sugar substitute.
  • Slowing incorporate mixture with the cream cheese and yogurt.
  • Mix until well blended.
  • Put into a greased 10″ springform pan and bake in preheated oven at 350 degrees for 35 – 40 minutes.
  • Refrigerate to thicken.
  • Add whatever topping you want.
